The Club at Renaissance welcomes Michelin-trained Jorge Pedrianes as executive chef

The Club at Renaissance announced the appointment of Jorge Pedrianes as executive chef. A Michelin-trained culinary expert with more than a decade of experience in high-end, world-class dining environments, Pedrianes brings his creative vision, commitment to sustainability, and passion for farm-to-table cuisine to the upscale private club’s elevated and member-focused culinary program.

Pedrianes joins The Club at Renaissance following a series of high-profile roles, including most recently serving as culinary consultant and food and beverage director for Bounce Empire in Colorado, where he led the full-scale design and execution of a 55,000-square-foot kitchen and bar.

He has also held key culinary roles within Miami’s world-famous culinary hub, including Forte Dei Marmi in South Beach, Red Fish Grill and Christy’s Steakhouse in Coral Gables, and Coya Restaurant and Members Club in Brickell. He has also delivered his culinary expertise to the coastal Maine community.

A graduate of the Miami Culinary Institute and fluent in both English and Spanish, Pedrianes is known for his mentorship, whole-animal butchery expertise, the practice of using every part of an animal, and scratch cooking techniques that emphasize flavor and freshness. He has trained under Michelin two-star Chef Antonio Mellino and contributed to multiple award-winning restaurant concepts featured in Yellow Scene, Travel Boulder and Boulder Weekly.
